Ingredients

  • 3 cups organic raw almonds (can also buy pre-roasted almonds)
  • 1/2 tsp kosher salt, (or to taste)
  • avocado oil or coconut oil, , optional & to taste, depending on consistency desired

Add-ons available:

  • ¼ tsp ground cinnamon
  • ½ tsp vanilla extract
  • 2 tbsp sugar-free maple syrup

Instructions

  1. Preheat the oven to 350° F. To roast the almonds, spread them on a baking sheet in an even, single layer and toast the almonds for 10-15 minutes until fragrant and golden brown mixing every few minutes to ensure an even roast. Pre-roasted almonds may be left out.
  2. Allow them to cool for 15 minutes in the oven. Put them in a food processor. It should take between 5-15 mins depending on what type of nuts you use and how fast the machine works. Scrape down the bowl using a spatula to remove any clumps. Blend until smooth. Stop to scrape the sides as necessary. You’re going to think it’ll never blend, but be patient! When you put the almonds into the food processor, it will turn to a mixture of flour-like lumps and a ball. The mixture will become creamy if you keep scraping it off the sides. If the mixture gets too hot, stop the machine. Let the mixture cool down for a bit.
  3. To achieve the desired consistency, you can also add oil (avocado or coconut).
  4. Blend in all other ingredients until the almond butter is creamy and smooth. You can flavor almond butter with salt and cinnamon. You can also choose from vanilla and/or sugar-free Maple syrup.
  5. Blend all ingredients until combined. To make my mixture, I used maple syrup that was sugar-free. Once it had cooled, I added the maple syrup to my mixture and blended it for a few minutes more to make it creamy.
  6. Let the almond butter cool to room temperature. Next, pour the mixture into a pint-sized mason container. Close the lid. The almond butter can be kept in the refrigerator for two weeks or until there are signs of spoilage.

Notes

A roast will help the almonds break down more quickly. You can make a mixed nuts butter by mixing raw cashews, walnuts, or pecans. You can roast them together in a skillet or oven.
