Ingredients

  • ⅔ cup Baking Blend (or equal parts almond flour, coconut flour, and ground golden flax
  • 6 eggs
  • 1 cup cottage cheese
  • ⅔ cup sweetener
  • ½ cup unsweetened cocoa
  • 4 oz cream cheese, softened
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 6 tbsp sugar-free chocolate chips, optional

Instructions

  1. Pre-heat the waffle iron. Blend all ingredients in a blender. Blend the ingredients until smooth. Scrape down the sides if necessary. Grease the waffle maker. Pour about 1/2 – 3/4 cup of batter onto the waffle iron (less if you are not using a Belgian waffle iron). Add 1/2 cup of chocolate chips.
  2. Cook until deep brown. Your waffle iron’s ready light may turn on before this happens. It’s okay to ignore. Remove the waffle by gently loosening it. Continue with the remaining batter.
